Have you watched 'You Are What You Eat' on Netflix? Weren't you gob-smacked by what Daniel Humm from Eleven Madison Park and his team achieved at their Michelin star restaurant?

I was, and I gave him a standing ovation in my home whilst watching how he had questioned and researched every bit of the supply chain of all the produce the restaurant served. 

'You Are What You Eat' introduced me to the awe-inspiring, culinary maverick who dared to transition his restaurant from offering meat, fish, and poultry to being a 100% plant-based fine dining restaurant.

The accolades he's received since then? Mind-blowing. It's not just about the recognition; it's a testament to the impact that one pioneer can have on the culinary world and our planet.

Daniel's journey showcased that shifting towards plant-based eating isn't merely a choice for ethical and environmental reasons; it's a celebration of culinary excellence and the importance of embracing a more sustainable approach to gastronomy.
